Turkish Börek Recipe:

Ingredients :
1 Fillo Dough (Pegagus dough is avaiable in a variet of styles)
2 cans of Spinach ( or bag of spinach )
3 medium patotoes ( boiled and smashed before you put inside the borek)
1/2 pound feta cheese, crumbled
1/4 cup extra virgin olive oil
1 egg
1 teaspoon sesame seeds

Preparation:
Use a large oven tray (baking dish would work perfect)
Each time lay 3 sheets of fillo dough on the counter.
Brush with some of the oil or use spray oil on the surface.
Add some spinach, and feta cheese crumbles equal amount.
If you use can spinach, make sure drain the spinach first.
When you place last fillo dough sheet, brush with 1 egg.
Sprinkle some sesame seeds on top as decoration.
Bake in a preheated oven at 375 degrees for 15 to 20 minutes or until just golden.
Makes 12 pieces borek, Serves 6 people.

Keep the remaining sheets of fillo dough covered with plastic, and work quickly to prevent in from drying out.

Hint on handling fillo dough: Be sure the dough is at room temperature before you open the box. Place the sheets of dough on a large cookie sheet and cover them with plastic wrap and then a heavy towel. In this way, they will not dry out while you are working with them.
